Indian Coleslaw For Weight Loss

You can add a lean protein if you want to turn this dish into a complete and filling lunch for two. This salad will keep fine for 2/3 days in the fridge.

Cooking Time: No cooking

Ingredients 
1 small green cabbage, finely chopped (about 3 cups)
3 medium tomatoes, diced
1 cup unsweetened shredded coconut ½ cup almond flour
1 large date, soaked, pitted and mashed Juice of 1 lemon
2 tablespoons olive oil
½ teaspoon ground brown mustard seed
½ teaspoon ground cumin seed ¼ teaspoon turmeric
1 tablespoon jalapeno, minced (optional) Sea salt to taste (optional)

Directions. 
In a large salad bowl, toss the cabbage, tomatoes, coconut and almond flour.

Put the soaked date in a small bowl and mash it. Add the rest of the ingredients (listed below the soaked date) to the small bowl and whisk them together until they’ve formed a smooth dressing.

Pour this dressing into the large bowl and combine it completely with the cabbage, tomatoes, coconut and almond flour.
