This versatile recipe allows for various substitutions. You can reduce the applesauce by ¼ cup and substitute an overripe banana before you blend. You can also add up to a half cup of chopped nuts, blueberries or raspberries. Another option is to add 3 tablespoons of cocoa powder.

- 5 eggs
- 1 cup applesauce
- ½ cup coconut flour
- 3 tablespoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon vanilla (optional)
- ¼ cup coconut oil
- 2 tablespoons honey (optional)
Directions
1st. Preheat oven to 400 F.
2nd. Grease a muffin pan with a small amount of coconut oil.
3rd. Put all the ingredients into a medium-sized bowl. Blend or whisk until well-mixed.
4th. Let the mix stand for 5 minutes.
5th. Use a 1/ 3 cup measure to spoon the mix into the muffin tins.
6th. Bake until the muffins start to brown and aren’t soft when you lightly touch the top, normally 12-15 minutes.
7th. Let muffins cool for 2 minutes. Optionally drizzle with honey.
8th. Serve.
